Easy Steak Sandwiches

I made my favorite steak sandwiches for dinner tonight.  They’re ridiculously easy to make, and so delicious.  I start with an onion, thinly sliced, and sauté it in a bit of olive oil until the onion is translucent.  Then I add in thinly sliced ribeye and a few slices of bacon chopped into bits, and cook until the steak is medium-done.  Some ground black pepper finishes off the steak-onion mixture.  For the rolls, this time I tried Cobblestone Mill’s whole wheat sub rolls, which worked well.  I spread them with a mix of mayonnaise and crushed garlic, then place slices of provolone cheese on top of the mayo.  Then, I spoon the steak mixture on top of the cheese and bake at 400° for about 5-8 minutes.  The bread ends up toasty, the cheese melty, and they seem to taste better every time I make them.

In other news, we’re waiting to find out what Sandy is going to do to us.  I expect we’ll lose power, but I hope it doesn’t stay out too long.  Luckily, we live on the third floor of a condo building, so we’re not at risk for flooding.

I haven’t written much in the last week, but I am now 5 for 5 on my elliptical plan.  Only 18 more days!  I’ve been doing a lot of intensive cleaning this week, and I’m really enjoying my steam mop.

I have a few social plans this week, but we’ll see if Sandy interferes with them.  I also turn 39 this Thursday – I can’t believe I’ll be 40 next year!  Domingos will turn 40 when we’re in India – I think we will be riding an elephant in Jaipur on his birthday.
